Water boils at one hundred degrees Celsius at sea level, but at higher altitudes it boils at a lower temperature because the air pressure is reduced. This calculator estimates the boiling point of water at a given elevation, using the common approximation that the boiling point drops by about one degree Celsius for every two hundred eighty-five metres of altitude. In a city about 1,600 metres high, water boils at roughly 94 degrees rather than 100.
The result is shown in both Celsius and Fahrenheit, with the drop below the sea-level boiling point.
Why altitude affects cooking
The lower boiling point at altitude has real effects in the kitchen: food cooked in boiling water takes longer because the water is cooler, which is why high-altitude areas need adjusted cooking times and recipes. Baking is affected too, as lower pressure changes how quickly dough rises and moisture evaporates. Pressure cookers counter this by raising the pressure, letting water reach a higher temperature.
