Why bits and bytes matter for speed

Connection speeds are almost always quoted in bits per second, as Mbps or Gbps, while the files you actually download are measured in bytes, and the factor of eight between a bit and a byte is exactly why a fast-sounding connection does not move files nearly as quickly as the headline number might lead you to expect. Converting between the bit-based rates and the byte-based ones, and across the whole scale from bps up to Gbps, resolves this cleanly. Why are speeds in bits but files in bytes?
